I gotta start looking for some 20's if I plan on runnng the 16" Rotors. What would be the ideal size rim, offset, width and what is the bolt pattern? Anyone got any good reccomendations for a certain wheel?

Hard to say what offset you would need. You need to find out how far the calipers stick out on the big break kit. Considering the Stoptech kit clears the factory wheels, you may be able to get away with a factory offset or slightly larger. Bolt pattern should be 5 x 114.3 (aka 4.5)

dont run rims that big if you wanna still play around in the truck... bigger brake kits dont stop you from hitting potholes/bumps/manholes bending your rims... stick with 18's or 19's at most http://www.CustomTacos.com/ubbthreads/images/graemlins/waytogo.gif

Do you think 19" rims will clear 16" rotors and 8 pot calipers? Maybe 16" is a little overkill huh.

Serious overkill for this truck. 14 inches would be more than enough. I'd go with Pip's suggestion of no larger than 19, but that's just me.

Thats the way I'm leaning to. Any suggestions on the offsets? Should I run staggered or the same size all the way around?

I never understood the whole staggered thing. It's all good for straight line running, but I've always read that same size rims for all four corners equals better hanbling characteristics. Not sure on the offset. I would contact Rotora and ask about the brake kit dimensions. Companies like Baer provide templates that you can print out to compare to the actual wheel you are looking at to make sure that they clear the calipers.
